Asian man feu rice noodles
Pho, often considered the national dish of Vietnam, is a rice noodle dish that uses a beef bone broth. After several dozen ho-hum attempts I finally settled on this, which I consider my definitive, recipe. This dish emerged from Hanoi in the early 20th century, and was brought to the US in the s by refugees after the fall of Saigon. The inclusion of beef in the dish is reflective of its French influence; prior to French colonialism, cows in Vietnam were mainly used for labor and not as a food source. In my opinion, oxtails are the only absolutely necessary part of getting that perfect broth. For this particular recipe I used brisket, oxtail, and knuckle bone from US Wellness Meats , and it was definitely a winning combo.

SHE used to walk past my little villa in Saigon, not far from the American embassy, her conical straw hat on the back of her head, white pajamas flapping as she loped down the street, soup makings dangling from the wooden yoke across her frail shoulders. She came early every morning, repeating the monosyllable with an inimitable inflection. That was 35 years ago, and I took it for granted that the delectable, aromatic noodle soup she sold, crowned with a lush tangle of green herbs, had originated many generations ago in the fertile Mekong Delta. Wrong on both counts, as I discovered when I finally returned not long ago to this ancient land that struggled so fiercely for freedom.

Where did pho come from? Does pho come from the French word, feu? Why does pho matter? Pho is so elemental to Vietnamese culture that people talk about it in terms of romantic relationships. Rice is the dutiful wife that you can rely on, we say.
Pho is considered Vietnam's national dish. Pho originated in the early 20th century in northern Vietnam , and was popularized throughout the world by refugees after the Vietnam War. Because Pho's origins are poorly documented, there is disagreement over the cultural influences that led to its development in Vietnam, as well as the etymology of the name. Pho likely evolved from similar noodle dishes.
